Some cookies for you?

I was craving for some finger food lately. I think the cold weather makes me so want to binge. Munching on chocolates and Pringles ain’t doing any good for my weight.
So I was browsing through my cookbooks for some finger food recipes and I came across this recipe for rolled oat or oat meal cookies. It’s simple and healthy too so I thought, why not giving it a try?
While I was still a child, I loved to indulge in Jacob’s Oatmeal cookies. I would munch on it until I my throat got sore. I couldn’t find the brand anywhere here.
Baking your own cookies is not such bad idea. You can throw in whatever extra ingredients you like. In the end it always turns out yummy and makes you think..hey..I can make the cookies myself too! Why bother buying
Ooopss..there’s someone stealing my cookies.
So if you want to try it out here’s the recipe adapted from the book Muffins, Die Besten Rezepte.
You need this:
150g soft butter or margarine
200g brown sugar
100g sugar
1 egg
1 packet of Vanilla sugar
225g of rolled oat
150g flour
1/2 tsp baking powder
1tsp salt
some pecan nuts, walnuts or chocolate chips (optional)Preparations:
1. Mix the butter or margarine, both sugar, egg, 2 tbsp of water and the vanilla sugar in a big bowl with a mixer until a creamy batter is formed.
2. Add in the rolled oat, flour, baking powder and salt.
3. Preheat the oven at 180°C. Scoop a table spoon of the cookie dough and lay it within ca. 5cm of each other on a baking tray laid with baking sheet.
4. Bake for 12-15mins at 160°C until golden brown. Once cool, store them in an air tight container.
