Coconut macaroons

If you’ve ever been shopping for chocolates, what kind of chocolates would you choose? Would you go for some local brands or would you indulge in some sinfully delicious imported chocolates that make you dig deep into your pocket? There is a huge variety of chocolates to choose from in Germany and one of my personal favorite is Raffaello by Ferrero.
Although it is not considered as chocolate but to me it tastes like some white creamy chocolate (but in actual they are coconut cream) covered with coconut flakes and an almond nut in the middle, a absolute must-try if you love to eat anything coconut. I’ve discovered a recipe for coconut macaroons the other day which bears a resemblance to this Raffaello coconut cream candy and I decided to try it out.
True to my expectations, it is absolutely delicious and I love it! Simple enough to make and also gluten free. Most important of all, they taste a lot like the Raffaello coconut candy minus the coconut cream. The picture above shows the coconut macaroons each the size of a small ping pong ball before being shoved into the oven.
And here they are, all golden brown, fresh from the oven. Here’s the recipe for coconut macaroons adapted from Clotilde’s recipe if you would like to try it out. I had 25 cookies from this amount of ingredients.
Coconut Macaroons
You need:
200g unsweetened coconut flakes
3 large fresh egg whites
one pinch of salt
160g sugarTo prepare:
1. Preheat oven to 210°c.
2. Mix all the listed ingredients above in a big bowl with a fork.
3. Then form the dough into the size of small ping pong balls and place them on a baking tray laid with a baking sheet.
4. Bake for about 10 mins until they turn golden brown.
My kitchen smelled so good of baked coconut cookies throughout the rest of the day. I munched about 5 of them at one go! They are crunchy on the outside especially if they are just freshly baked. On the inside, they have a softer texture. I kept them in an air-tight container and store them in the fridge. They taste even better! Thorsten asked whether Christmas comes early this year?

WOW! This looks so good and not too difficult!! How many balls could be made? Ahh… I’m so hungry. I got to go prepare dinner. Can I have one before I leave? =P
