Bruschetta with roasted garlic
My boyfriend had a sudden yearning for baked garlic bread last weekend and it’s been ages since I’ve had one myself. I’m very glad because like me, he’s a garlic lover as well and I’ve come across some Germans who don’t like to eat garlic at all. I thought that instead of buying those frozen ready made garlic bread, we can very well have some goodness of homemade garlic bread.
To make the garlic spread, I used two garlic heads and chopped them off about half an inch at the top.
Drizzle some extra virgin olive oil on top of the garlic and make sure that all the exposed garlic flesh are well covered with olive oil. Then sprinkle some salt and pepper on them. Wrap them in aluminum foil and place them on a baking ray. I use a muffin tray.
Preheat the oven at 200°C and bake the garlic for around 40mins until the garlic flesh is tender when you poke them with a fork. Meanwhile, you can start preparing the toppings for your bruschetta. Cut the tomatoes in cubes, slice the olives thinly and chop ‘em basil leaves. Add in a few drops of olive oil and a teaspoon of thyme and oregano leaves. Add salt and pepper to taste. Cut the zucchini into slices.
When the garlic has cooled, use a breakfast knife to extract the flesh and spread your french loaf with it.
Sprinkle some salt and freshly ground black pepper on the garlic spread. Place about two slices of zucchini onto each bread and drizzle a few drops of olive oil on them.
Top the zucchini slices with your tomatoes and olives and cover them with shredded cheese or mozzarella. Show them into the oven and bake for about 10-15mins until the cheese melt.
Yumm….summer has never felt so good. It’s healthy, it’s a light meal for those hot summer days, it’s some cool looking finger food, it’s delicious and my kitchen has never smelt so GOOD.
At first I thought that the amount of garlic might do quite a lot of damage to the breath but surprisingly, the baked garlic doesn’t have quite an intense smell as I’ve imagined. But as a precaution, it might not really be the best idea to eat them before going on date

You need (serves 2):
1 Baguette
2 large ripe tomatoes
About 10 olives
5 fresh basil leaves
1 tsp of thyme leaves
1 tsp of dried oregano (preferably fresh)
1 medium size zucchini
Shredded cheese or mozzarella cheese
2 garlic head
Extra virgin olive oil

Ah, one of my favourite finger food. Looks good and I bet the nice smell lingers for a while too..
Chin, yep, the heavenly smell lingered awhile in my kitchen ….and the garlic breath too LOL
